Oyster, smoked cream, chive oil

Baja kumiai oysters under a veil of applewood smoke, finished tableside.

Pour — Champagne, extra brut

Charred beet, black garlic, rye

Beets from Chino Farm roasted in embers until the sugars turn dark.

Pour — Amontillado sherry

Handmade agnolotti, brown butter

Ricotta folded that afternoon, sage from the roof, butter taken to the edge.

Pour — Chardonnay, unoaked

Duck, cherry, five-spice jus

Dry-aged fourteen days, rested over cherrywood, carved in the room.

Pour — Pinot noir, Sta. Rita Hills

Bitter greens, preserved lemon

A sharp, cold pause before the fire returns.

Pour — Vermouth, house-spiced

Aged cheddar, honeycomb, ash

Five-year cheddar with honey from the coast and a whisper of oak ash.

Pour — Tawny port, 10 yr

Burnt sugar, cream, midnight salt

Crème brûlée torched to near-black, salt harvested at low tide.
